Pesach Chocolate Chip Cookies

These are our Babi’s special Pesach cookies, and they are the best! We love making them with our grandmother when we are with her, and when we’re not, we love making them on our own (well, those of us who are old enough to mix and measure). This recipe for these cookies came from the back of a bag of chocolate chips many years ago when our parents were small. We can’t imagine Pesach without them!
INGREDIENTS
2 cups sugar
3 eggs
2 sticks margarine
3 packets vanilla sugar
2 bags ground almonds (7 oz. each)
2 cups potato starch
1 package chocolate chips
DIRECTIONS
1)Cream sugar, eggs, margarine, and vanilla until fluffy.
2)Add ground nuts and potato starch.
3) Stir in chocolate chips.
4) Refrigerate dough for several hours.
5) Drop teaspoonful mixtures onto a large cookie sheet lined with parchment paper and freeze for 10 minutes.
6) Bake at 350 degrees for about 25 minutes until done.
