Latke – Without the Patchke

 

We typically commemorate the miracle of Chanukah by eating oil-drenched foods. But as always, I’m putting a twist on tradition by creating two super-healthy and easy non-fried recipes showcasing the veggie of the month: POTATOES! 

 

Tater Tot “Latke”

 

Avoid standing over the stove by a hot pan of oil, and pop frozen Tater Tots in a waffle maker, creating a crispy flaky makeshift latke. What a delicious shortcut! 

 

Ingredients:

 

1 bag frozen Tater Tots, or enough to feed your crowd  

 

Instructions:

 

  1. Preheat your waffle maker for 5 minutes on high setting.
  2. Form four large square clusters of Tater Tots, one per section.
  3. Cook for 15-20 minutes until golden brown and crispy.

 

Truffle Baked Curly Fries

 

Here’s a whimsical fried alternative to baked french fries. Spice these up however you’d like. I love the combination of potatoes and truffle seasoning. The flavors speak for themselves, but the shape is just for fun!

 

Ingredients:

 

5 Idaho potatoes, spiralized 

1 teaspoon truffle salt (or truffle oil)

1/2 tsp. garlic powder

1/4 tsp. black pepper

3 tbs. oil

Sliced scallions, for garnish

 

Instructions:

 

  1. Preheat your oven to 400 degrees.
  2. In a bowl, sprinkle the seasoning on top of the potato pieces and toss to coat them all evenly.
  3. Spread the fries evenly out on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes until cooked through and crispy. Serve warm.

Winning Dips

 

Typically, latkes are served with apple sauce or  sour cream, but both those toppings can be kind of bland in flavor. Up your game this Chanukah with these sour cream dips!

 

 Green Goodness Sour Cream

 

1 1/2 cups sour cream
1/4 cup parsley, chopped fine

2 tbs. milk
2 tbs. dill (fresh/dry)
2 tbs. fresh lemon juice
1/2 tsp. garlic powder
1/2 tsp. salt
1/2  tsp. pepper


 Spicy Sour Cream

 

1 1/2 cups sour cream

1/4 cup sriracha 

1 tbs. lime juice

1/4 tsp. salt
